2oz grated Cheddar
2oz grated Cheshire
2oz wholewheat flour
pinch of salt
pinch of pepper (black is best)
pinch of cumin
Oven on Gas 5 190C
Sift flour and salt into bowl with seasoning.
Add the cheese and butter - rub in until crumbly.
Form the mixture into ball - use a bit of milk if dry.
Roll out to around 4mm (not critical).
Cut into whatever shapes you like around 4cm x 4cm.
Put on baking sheet and bake for 10 minutes.
Don't overcook, they burn easily.
They will go crisp on a wire rack while cooling.
